Provola is a soft cheese made with cow’s milk. It looks like mozzarella in terms of the shape and weight, but is much firmer. Provola is commonly used both as a table cheese and in cooking. It melts easily, so can be used in pasta or other courses, such as delicious bruschetta . It is available in smoked variation.
