Filone is an Italian semi-hard cheese known for its mild, creamy flavor and smooth, slightly elastic texture. Made from cow's milk and is popular in southern Italy, where it is often produced in long, loaf-like shapes that resemble a baguette - hence the name "filone”, meaning "loaf" in Italian. We produce Filone in the same way as in southern Italy.
The cheese has a pale yellow color and a slightly nutty taste, making it versatile for cooking or enjoying on its own. Also, It pairs beautifully with wines and cured meats, adding a subtle yet rich flavor to any meal.
