The cheese maker who started the project
Francesco Ludovico grew up in Gioia del Colle, a small town in Puglia, Italy, known for its famous mozzarella and long history of cheesemaking.
At the age of 15, he started working in a local cheese factory, where he learned to turn fresh milk into delicious cheeses.
Over the years, Francesco became skilled at making mozzarella, burrata, stracciatella, ricotta, and scamorza. For him, cheesemaking is not just a job but a passion and a way to keep the traditions of his hometown alive. Inspired by the rich heritage of Puglia, he saved the unique flavors that make his cheeses so special.

Now you are pleased with cheese, from our cheese master, Mauro Cassone. He was born in Putignano, a small village in Bari, Italy. He began his educational journey in the art of cheesemaking at the age of 14, studying under his first mentors, Michele Palazzo and Vincenzo Parrotta.
Driven by this passion, he took his expertise beyond the borders of Italy, sharing his knowledge with the world. Over the years, Mauro traveled to several countries, including Brazil, Turkey, the United States, Russia, and Germany. In each of these places, he discovered unique opportunities to learn and adapt, blending the rich history of Italian cheesemaking with local customs and flavors.
Today, Mauro continues to inspire others with his expertise and dedication to the craft, continuing that the legacy of Italian cheese and traditions.
