Ricotta comes from the Latin word “recocta”, which means cooked twice. After cheese production, the resulting whey is heated a second time. So, ricotta, although commonly thought of as a cheese, is actually a dairy product that is made by reusing the whey left over from previous processing.
According to its characteristics of protein content, amino acids, minerals and vitamins, ricotta is a unique product. It is suitable for filling pies and cheesecakes. It is perfect in combination with pasta, for breakfast with fresh berries, jams, honey, toasts and pastries.
